2014 Fuding Shoumei Premium White Tea Cake

This white tea from Fuding, Fujian Prov. China, is something which does not fall into any tea category, due to its special processing technique. I would place it into the Oolong category.

After picking the fresh leaves, the tea leaves are withered in the dark, that causes some interior oxidation by the interior enzymes. Its tea broth and aroma is very similar to a light black tea. The tea broth color turns to more and more red after several infusions.

It's smooth, sweet, and aromatic, it's one of a kind.
