Green, or Unfermented, or Raw Cake Pu-erh tea (Chi Tse Beeng Cha) refers to compressed tea (cake shape) made of sun-dried green tea leaf that grows in southwest Yunnan province of China.
The raw leaves have a marked bitterness. They are plucked, panned, sun-dried, and steamed; after which they are pressed into circular cakes of varying diameters. It can be slow-aged over many years to bring out a very refined flavor profile, then it becomes 'naturally fermented Pu-erh tea' that tastes smooth, pleasant and sweet.
